Who doesn’t love soup in the Fall?!?! When I had Rayce my sweet sister in law asked to bring us dinner and I’m SO glad she did. She brought us this DELICIOUS Creamy Potato Soup and I have been hooked ever since. It. Is. My. Favorite. Plus it’s REALLY easy to make and doesn’t require a ton of ingredients, win, WIN! This is definitely one of those recipes you can easily alter depending on how much you want to make.
3-5 large potatoes, peeled and diced (bite size)
1/4-1/2 onion, diced
1/2 cup-1 cup shredded carrots
3/4 cup – 1 cup chopped ham
3-4 cans chicken broth
3/4 cup whipping cream (more or less depending on how big a batch you are making)
shredded cheese (optional)
Again, this is one of those recipes that can easily be adjusted. If you like more or less of something it can be altered without really changing the overall flavor. I’ll be honest I’m NOT a fan of cooked carrots but I like them in this soup.
Start off by chopping up your potatoes and onion. I prefer to buy a bag of shredded carrots but this time I didn’t have any so I had to chop some up.
Place potatoes, onions and carrots in a large pot and cover with chicken broth. Bring to a boil, stirring occasionally. When the potatoes are almost done add the chopped ham.
Cook until potatoes are tender. Then add the whipping cream. That’s IT! You are DONE! We like ours topped with shredded cheese and served with warm rolls. Mmmmm perfect for those brisk Fall nights!
