Nothing is better than finding a recipe that can be a dessert and a snack and I found one. I found it at this site. The bad part is when I make it, I almost want to say to my kids, “You want a cracker with that red velvet.” Needless to say, it tends to go quickly! The best part is when I told my husband Wednesday night that I was making it for Friday’s post, he got all sorts of excited and then quickly became disappointed when he realized he had to wait until Friday to eat it. So yes, it is indeed delicious! So without further ado, here it is.
8 ounces cream cheese, at room temperature
½ cup butter, at room temperature
1½ cups red velvet cake mix, dry
2 tablespoons brown sugar
½ cup powdered sugar
½ cup mini chocolate chips
Assorted cookies and crackers (my favorite was Nilla Wafers)
In the bowl of a stand mixer, beat the cream cheese and butter until smooth. Add in the red velvet cake mix, the brown sugar and the powdered sugar. Beat until smooth and combined. (Ok, here’s where I do thing’s differently. I want chocolate chips in every bite not just the outside so I dump a cup of mini chocolate chips in the mixture before I wrap it up. It’s WAY better).
Turn the mixture out onto a piece of plastic wrap. Wrap up into a ball and refrigerate for at least 2 hours.
Put the chocolate chips on a plate or in a shallow dish. Remove the cheese ball from the refrigerator and unwrap. Roll in the chocolate chips. This might get messy! Place on a serving plate and serve with cookies or graham crackers. We LOVE it with Nilla Wafers but if you find something that you like better let me know.
