That’s right, it’s Taco Tuesday! And what better way to celebrate a Taco Tuesday in the Fall than with a DELICIOUS bowl of (EASY) Taco Soup? This recipe is quick and easy! Here’s what you’ll need:

Ingredients:
1lb hamburger
1/2 yellow onion – chopped
1/2 green pepper – chopped
1/2 red pepper -chopped
1 can kidney beans
1 can black beans
1 can pinto beans
1 can corn
1 small can tomato sauce
1 can Rotel tomatoes
1/2 cup salsa
taco seasoning – to taste

To say that today’s recipe is easy almost feels like an understatement. These things are seriously so simple and insanely delicious. I made them a while back for a family get together and there were two things everyone kept asking me about them 1) How did you make them?! and 2) Why didn’t you make more?! Who doesn’t love soup in the Fall?!?! When I had Rayce my sweet sister in law asked to bring us dinner and I’m SO glad she did. She brought us this DELICIOUS Creamy Potato Soup and I have been hooked ever since. It. Is. My. Favorite. Plus it’s REALLY easy to make and doesn’t require a ton of ingredients, win, WIN! This is definitely one of those recipes you can easily alter depending on how much you want to make.

Ingredients
3-5 large potatoes, peeled and diced (bite size)
1/4-1/2 onion, diced
1/2 cup-1 cup shredded carrots
3/4 cup – 1 cup chopped ham
3-4 cans chicken broth
3/4 cup whipping cream (more or less depending on how big a batch you are making)
