That’s right, it’s Taco Tuesday! And what better way to celebrate a Taco Tuesday in the Fall than with a DELICIOUS bowl of (EASY) Taco Soup? This recipe is quick and easy! Here’s what you’ll need:

Ingredients:
1lb hamburger
1/2 yellow onion – chopped
1/2 green pepper – chopped
1/2 red pepper -chopped
1 can kidney beans
1 can black beans
1 can pinto beans
1 can corn
1 small can tomato sauce
1 can Rotel tomatoes
1/2 cup salsa
taco seasoning – to taste

Who doesn’t love soup in the Fall?!?! When I had Rayce my sweet sister in law asked to bring us dinner and I’m SO glad she did. She brought us this DELICIOUS Creamy Potato Soup and I have been hooked ever since. It. Is. My. Favorite. Plus it’s REALLY easy to make and doesn’t require a ton of ingredients, win, WIN! This is definitely one of those recipes you can easily alter depending on how much you want to make.

Ingredients
3-5 large potatoes, peeled and diced (bite size)
1/4-1/2 onion, diced
1/2 cup-1 cup shredded carrots
3/4 cup – 1 cup chopped ham
3-4 cans chicken broth
3/4 cup whipping cream (more or less depending on how big a batch you are making)

I love it when I find a recipe that I love, and even better when my kids love it. This is one of those, and yes I just used love 3 times, it’s that good. I grew up on this delicious recipe. ┬áIt is one of those recipes where it can be 4 o’clock in the afternoon and we need to be somewhere by 6 and I still have time to make it, not fight the kids to eat it and still be where we need to be on time.
