That’s right, it’s Taco Tuesday! And what better way to celebrate a Taco Tuesday in the Fall than with a DELICIOUS bowl of (EASY) Taco Soup? This recipe is quick and easy! Here’s what you’ll need:

1lb hamburger
1/2 yellow onion – chopped
1/2 green pepper – chopped
1/2 red pepper -chopped
1 can kidney beans
1 can black beans
1 can pinto beans
1 can corn
1 small can tomato sauce
1 can Rotel tomatoes
1/2 cup salsa
taco seasoning – to taste

I’ve been slaving away in the kitchen today! Goodness! Not only did I whip up this crowd-pleaser dessert to share with you all, today is the hubby’s birthday! I told him yesterday I’d make him Pork Barbacoa for dinner and then later he requested I make a pie (a new family tradition — pie instead of cake). Busy, busy to say the least.

I decided I wanted to share this quick, childhood dessert with you last week and for some weird reason, my week got away from me and I wasn’t sure it would happen. When it finally came down to it though, I thought, “What the heck. It’s only one more thing to cook and it doesn’t take long.” Growing up this dessert was one of our go-to, easy dessert recipes. It always was, and still is, a HUGE hit whenever we share it with others. And because we don’t need a million desserts sitting around the house, I think I will share it with my neighbor who has saved me a time or two the last couple of weeks. Win-win!

I love it when I find a recipe that I love, and even better when my kids love it. This is one of those, and yes I just used love 3 times, it’s that good. I grew up on this delicious recipe.  It is one of those recipes where it can be 4 o’clock in the afternoon and we need to be somewhere by 6 and I still have time to make it, not fight the kids to eat it and still be where we need to be on time. So let me just start off saying that this project was both a HUGE pain but a HUGER (is that a word?) success! It took many hours digging through recipes, both in my recipe book and my favs saved on Pinterest, lots of copying and pasting, lots of typing and LOTS of patience. There were so many times I considered giving up on the project all together but I’m SOOO glad I didn’t!!!!! So, if you’re considering this project be sure you understand how much patience you’ll need to complete it…and if you’re a busy wife and mom like I am, go into knowing it’s not just a few day project.
