That’s right, it’s Taco Tuesday! And what better way to celebrate a Taco Tuesday in the Fall than with a DELICIOUS bowl of (EASY) Taco Soup? This recipe is quick and easy! Here’s what you’ll need:

1lb hamburger
1/2 yellow onion – chopped
1/2 green pepper – chopped
1/2 red pepper -chopped
1 can kidney beans
1 can black beans
1 can pinto beans
1 can corn
1 small can tomato sauce
1 can Rotel tomatoes
1/2 cup salsa
taco seasoning – to taste

Who doesn’t love soup in the Fall?!?! When I had Rayce my sweet sister in law asked to bring us dinner and I’m SO glad she did. She brought us this DELICIOUS Creamy Potato Soup and I have been hooked ever since. It. Is. My. Favorite. Plus it’s REALLY easy to make and doesn’t require a ton of ingredients, win, WIN! This is definitely one of those recipes you can easily alter depending on how much you want to make.

3-5 large potatoes, peeled and diced (bite size)
1/4-1/2 onion, diced
1/2 cup-1 cup shredded carrots
3/4 cup – 1 cup chopped ham
3-4 cans chicken broth
3/4 cup whipping cream (more or less depending on how big a batch you are making)

If you haven’t gathered by now I love Fall. The chill in the air makes me want to put on a sweater and enjoy this season for as long (or as short, which is usually the case) as it lasts. I love looking out the window and seeing the many colors of leaves on the trees and watching the potatoes in our field being dug up. Another reason I love this season is it is the start of SOUP season. I love soup! I have missed it and can’t wait to start cooking it again.

This soup recipe is in honor of what we Idahoans like to call Spud Harvest. Yes that is a real thing, and yes the kids really do get out of school for it. No judging. I wish I knew where this recipe came from, I have no idea. I have been making it for years. My family loves it.
